Chiapas has a wide culinary tradition, a product of cultural fusion after the conquest. In main dishes there are interesting stews such as "chanfaina", an almost forgotten dish, which is prepared with beef offal; yet another, sophisticated, is called “ninguijuti”, made from pork with garlic, chili, tomato, pepper and masa. If you are not very fond of trying the culinary surprises of the region, you can opt for the traditional "cochito", which is nothing more than a small baked pig, or try the jerky with chilmol. To accompany all this, it is necessary to taste some of the traditional drinks such as taxcalate, which contains cocoa, cinnamon, achiote and toasted corn, the refreshing pozol which is a drink made of corn dough with cocoa and be sure to try the famous comiteco, which is a light agave brandy, with a very good flavor and wonderful effects.
