This soup is typical of Tlaxcala and here we share a recipe so that you know how to prepare it.
INGREDIENTS (FOR 10 TO 12 PEOPLE)
- 1 stick of butter.
- ½ finely chopped onion.
- 2 poblano peppers roasted, peeled, trimmed and cut into slices.
- 2 cups roughly chopped pumpkin flower
- 1 cup of cooked corn kernels.
- 1 cup of cooked and peeled green beans.
- 4 cooked nopales, rinsed and julienned.
- 3 liters of chicken broth, can be substituted for broth made with bouillon powder.
- 1 branch of epazote or to taste, salt to taste.
PREPARATION
In the butter, add the onion, add the slices and fry for a few seconds, add the pumpkin flower, the corn kernels, the broad beans, the nopales and fry for a minute. Add the broth and epazote and simmer for 10 minutes or until well seasoned.
PRESENTATION
In a tureen and deep clay dishes, as they keep the heat very well.
