With this recipe you can prepare a delicious huauzontle beef steak, a unique ingredient of Mexican food.

INGREDIENTS

(For 5 people)

  • 5 flattened fillets of 200 grams each salt and pepper to taste
  • oil for frying

For the filling:

  • 100 grams of huauzontle, very clean and without twigs
  • 50 grams of butter
  • 1 teaspoon chicken broth powder

For the pasilla sauce:

  • 4 pasilla chili peppers
  • 4 guajillo chilies
  • 1 small tomato roasted, ginned and peeled
  • 1 garlic clove roasted
  • ½ roasted onion

To decorate:

  • thick cream

To accompany:

  • Straw potatoes or mashed potatoes

PREPARATION

The fillets are seasoned with salt and pepper, filled with the prepared huauzontle, rolled, held with a toothpick and fried on the grill or in a pan with a little oil for approximately 10 minutes on each side. The dish is salted and a few drops of cream are put on it, which are then spread with the tip of a toothpick to give them a decorative shape.

Filling: The huauzontle is cooked, liquefied with a little of the cooking water and sautéed in butter, seasoning it with the powdered consommé.

Pasilla sauce: The chili peppers are roasted, ginned, put to soak in boiling water to soften and blend with the rest of the ingredients. The resulting sauce is strained, salt is added to taste and simmered for four minutes.
