Tlaxcala cuisine has its own personality and its flavors are unique, such as mole colorado. We tell you how they prepare this delicacy in Tlaxcala.

INGREDIENTS

(For 12 people)

  • 1 turkey or 3 chickens cut into pieces, cooked with an onion
  • 2 cloves of garlic
  • 1 carrot
  • 1 stick of celery
  • 1 bay leaf

For the mole:

  • 150 grams of lard
  • 1 onion, roughly sliced
  • 5 garlic cloves
  • 1 plantain, sliced
  • 1/2 toasted tortilla on the comal
  • 1 piece of butter bread
  • 200 grams of toasted sesame seeds
  • 200 grams of peanuts peeled and roasted
  • 10 almonds
  • 3 tablespoons toasted pumpkin seeds
  • 50 grams of raisins
  • 1 cinnamon stick
  • 3 cloves
  • 5 fat peppers
  • 1 teaspoon of anise
  • 1/8 teaspoon oregano
  • 8 mulatto peppers, deveined and sliced
  • 5 ancho chili peppers, deveined and shredded
  • 5 pasilla chili peppers, deveined and in strips
  • 8 mecos chilies, deveined and shredded
  • 1 wheel of metate chocolate
  • Salt and sugar to taste

PREPARATION

Cook the turkey or the chickens with the ingredients and water to cover. Once cooked, it is removed from its broth, it is strained and set aside.

The mole:

In a large casserole, the butter is burned, where the onion and garlic are seasoned, then the plantain is added and fried until golden, then the rest of the ingredients are added and fried quickly, because if the sesame, peanuts or chilies go browned, the sauce becomes bitter. Blend everything with a little of the broth where the turkey or chickens were cooked and strain. Put it back in the casserole, add the necessary broth and let it season over a low heat for 15 to 20 minutes. Add the meat, boil for 10 more minutes and serve.

PRESENTATION

Accompany the mole with red rice and beans from the pot.
