Nothing like a delicious muffin to share. Follow this simple recipe to prepare one Doña Josefina style.
INGREDIENTS
(For 8-10 people)
- 1/2 kilo of ground and sifted cacahuazintle corn flour
- 1/2 kilo of sugar
- 1/2 kilo of butter
- 14 eggs
- 1 glass of cognac
PREPARATION
In a large saucepan, mix the butter and sugar very well, add the eggs one by one and continue beating, then add the flour and brandy and continue beating for an hour with a wooden spoon.
Two medium pancake molds (or a large one) are greased and floured and placed in the preheated oven at 180ºC for an hour or until a toothpick in the center comes out clean.
Note. Cacahuazintle corn can be ground to a mill, as it is much easier than doing it at home.
