Don't be surprised by the name of this recipe, the rotten pot is the opposite of what you might think. Follow this recipe and give it a try!

INGREDIENTS

(For 18 people)

  • 1 kilo of chicken in pieces
  • 1 kilo of beef for cooking cut into pieces
  • 1 kilo of solid pork cut into pieces
  • 1 kilo of chayote thickly sliced
  • 1 kilo of carrot, peeled and cut into large pieces
  • 1 medium cabbage divided into medium pieces
  • ½ kilo of zucchini cut in two lengthwise
  • 1 kilo of potatoes peeled and divided into four
  • ¼ kilo of green beans
  • ½ kilo of fresh beans
  • ½ kilo of fresh pea
  • 2 chopped onions
  • 4 tomatoes, peeled and ginned
  • 4 ancho chili peppers
  • 4 guajillo peppers
  • 3 xalapeño peppers
  • 2 xoconostles
  • 2 sprigs thyme
  • 2 sprigs of marjoram
  • 2 cloves of garlic
  • Salt to taste
  • 2 cups of pulque or to taste
  • 1 beer
  • ½ cup brandy or to taste

PREPARATION

The meats are cooked with little water until they are soft. The vegetables are also cooked with little water, taking care that they are not overcooked and join the meat. The tomato is ground with the pulque, the chilies soaked in hot water, the aromatic herbs and the garlic, strain and add to the above, add salt to taste, the beer, the xoconostles and let it boil for a few minutes. until well seasoned, finally add the brandy, boil for 2 more minutes and serve.

PRESENTATION

In a clay pot and individual clay dishes, it is served with freshly made tortillas.
