INGREDIENTS

For the Chamorros: 8 pork shanks, 2 bay leaves, 3 sprigs of oregano, 2 sprigs of thyme, 1 piece of onion, 2 cloves of garlic, salt to taste.

For the sauce: 4 roasted tomatoes, 1 roasted small onion, 2 roasted garlic cloves, 7 roasted and ginned pasilla chiles, 3 tablespoons of roasted sesame, 1 pinch of cumin, 6 epazote leaves, 1 bay leaf, 3 cloves, salt and pepper to taste, 1 tablespoon of lard or corn oil. For 8 people.

PREPARATION

The chamorros are put to cook with all the ingredients and water to cover until they are very soft. The meat is removed from the broth and shredded into large pieces. It is placed in the sauce, it is brought to a boil and it is served accompanied by white rice with chic aritos and chopped carrots.

sauce: All the ingredients are ground together, except the butter, if necessary add a little of the broth where the meat was cooked, and strain. The butter is heated and the sauce is seasoned there, the meat is added and simmered for a few minutes.

PRESENTATION
