In an old mansion from the beginning of the last century, which contains history and legend within its wide walls, the Gaia Restaurant Bar was installed. For eight years Cuernavaca has had one of the best places, nationwide, for the enjoyment of the senses, surrounded by a warm environment that seduces us and invites us to enjoy its haute cuisine, excellent service and personalized attention from its owner: Pepe de los Ríos, restaurant owner with more than 25 years of experience.

A warm atmosphere

From the main hall we can admire the original design attributed, says the legend, to Diego Rivera to decorate the pool of the house, which at one time was inhabited by Mario Moreno "Cantinflas". The central figure of Rivera's drawing is made with great mastery by artists from Morelos in Venetian mosaic, dedicated to a pre-Hispanic goddess, by the way, the designers were inspired to create the restaurant logo.

The original style of the house was respected. The terrace and its large rooms were fitted out and elements of contemporary architecture were added with intelligence and good taste to create a comfortable atmosphere. Modern, sober and comfortable furniture was selected. Large paintings cover its walls, works by contemporary artists who live in the state of Morelos.

The kitchen

This space becomes the experimental laboratory, in which the award-winning chef Andrea Blanco combines the various elements of the Mexican food basket, with the classics of international gastronomy, to generate new flavors and textures, with the unique aim to flatter the most purist and demanding palate.

The menu is characterized by the great diversity of Mediterranean cuisine dishes with a subtle influence of the traditional Mexican, resulting in new combinations that provide us with a rich and varied range of flavors such as mango, tamarind, pumpkin flower and the famous representative of Aztec cuisine, the huitlacoche. All dishes with a spectacular three-dimensional presentation and of very high quality. And to take a sweet memory it is a must to try the refined and original desserts, made with select fruits of the season and the finest chocolates.

The modern cava

It has been installed in view of the diners and has a wide variety of labels of the best Mexican and international wines to obtain the right pairing. From the terrace, dusk transports us to bygone times, when Cuernavaca was a bucolic 19th century city. With the first shadows the majestic image of the cathedral appears, and thus ends this fleeting culinary walk that could not leave us with a better taste in our mouths.
