El Delfín Restaurant shares with us its recipe for Octopus Tower with apple wafers, coriander mayonnaise and mango sauce. A delight!
INGREDIENTS
(For 1 person)
For the filling:
- 2 teaspoons of butter
- 2 tablespoons finely chopped onion
- 1/3 of cup of apple peeled and diced
- 3 tablespoons clean celery, diced
- 3 tablespoons coriander
- Salt and pepper to taste
- 100 grams of octopus cooked well clean and chopped
For the caraway apple wafers:
- 1 apple cored and sliced very thinly
- 1 teaspoon ground caraway seeds
- 1/4 of cup of sugar
For the coriander mayonnaise:
- 1 egg yolk
- 1 teaspoon Dijon mustard
- 1/2 tablespoon of white vinegar
- A few drops of Worcestershire sauce
- A few drops of hot sauce
- 1/2 cup tightly packed coriander leaves and 2 ground coriander seeds with 1 cup of olive oil
- Salt to taste
For the mango sauce:
- 1 cup of mango pulp
- 1/4 cup of water
- 1 jalapeno pepper finely chopped
PREPARATION
The filling:
The onion is seasoned in the butter, the apple and the celery are added and they are left to soften; then they are removed and the octopus and cilantro are added.
The apples:
The apples are spread on waxed paper placed on a baking tray, sprinkled with the sugar mixed with the caraway and put in the oven at a very low temperature (100 ° C) for one hour (30 minutes on one side and 30 minutes on another) or until golden brown.
The Mayo:
In a bowl put all the ingredients, except the oil. They mix very well while the oil is added little by little, beating vigorously until the point.
The mango sauce:
The mango is liquefied with the sugar and then the minced chili is added.
Note: Both the cilantro mayonnaise and the mango sauce make for more people.
A tower is formed on a serving plate, alternately putting some apple wafers and a layer of filling, until finishing with wafers. This tower is surrounded on one side with coriander mayonnaise and on the other with mango sauce.
