Talking about Mexico is talking about tacos, of these there is a great variety such as Potosinos, a delight to the palate that you can prepare following this recipe.
INGREDIENTS
(For 8 people)
- 24 small tortillas
- 750 grams of ranchero cheese crumbled
For the sauce
- 1/2 kilo of ancho chili ginned and soaked in very hot water
- 3 garlic cloves
- 1 pinch of cumin
- Lard or corn oil for frying
- Salt to taste
To decorate
- 4 large potatoes cooked in salted water, peeled and cut into squares
- 5 carrots, peeled, cooked in salted water and cut into squares
- 2 small long-eared lettuces, leafless, disinfected and chopped
- Serrano peppers in vinegar, to taste
PREPARATION
The tortillas are dipped in the sauce, then in the butter or hot oil, stuffed, rolled up, arranged on a plate and covered with potatoes, carrots and lettuce. Sprinkle with cheese and add whole pickled peppers.
