INGREDIENTS

  • 150 grams of peeled almonds.

  • 2 liters of milk.
  • 2 cups of sugar.
  • 8 egg yolks.
  • 1/2 cup of sherry.
  • Cinnamon powder.

PREPARATION

The peeled almonds are ground with a little milk, until they are well mixed, this is mixed with the rest of the milk and the sugar and put on low heat until it thickens, approximately 30 minutes; Then it is removed from the fire, allowed to cool a little and the yolks are added, beating vigorously so that they do not cook; It is put back on the fire and when it begins to take point add the toasted almonds and the sherry. Keep beating the almonds until you can see the bottom of the saucepan. Finally, it is emptied into a heat-resistant serving platter, sprinkled with cinnamon, and placed under the grill to brown.
