Prepare some delicious bean tlacoyos served with huitlacoche, cheese and green sauce. Follow this recipe!
INGREDIENTS
(For 8 people)
For the tlacoyos:
- 1 kilo of black corn dough
- 1 kilo of black beans cooked with 3 avocado leaves and 1 teaspoon of tequesquite
- 10 serrano peppers
- 2 tablespoons of butter
- Salt to taste
- 300 grams of fresh cheese crumbled to sprinkle
- Green sauce to accompany
- Chopped onion
For the huitlacoche:
- 2 tablespoons lard or corn oil
- 1 medium onion, roughly chopped
- 1 kilo of huitlacoche very clean and chopped
- Salt to taste
PREPARATION
The beans are ground with the avocado leaves and the chilies and added to the hot butter, they are left to thicken until they are like a thick puree. The tortillas are made with the black corn dough, the beans are placed in the center, the two ends of the tortilla are folded towards the center, surrounding the filling and giving them an elongated shape. They are cooked on the hot comal.
huitlacoche:
The onion is seasoned in the oil or butter and the huitlacoche and salt are added to taste and fry for a few minutes.
PRESENTATION
Once the tlacoyos are cooked, they are placed in an oval clay plate. When serving, add green sauce, then the stewed huitlacoche and finally sprinkle with cheese and chopped onion.
