The atole is as Mexican as the tamales and how they crave together! So, try this recipe for atole de joy and accompany it with your favorite tamales.

INGREDIENTS

(For 10 to 12 people)

  • ½ kilo of roasted or unroasted amaranth seeds
  • ¼ kilo of sugar
  • some cinnamon sticks
  • 2 liters of water

PREPARATION

If the amaranth seed is not toasted, once clean it is lightly toasted in a pan, stirring it with a wooden spoon so that it does not burn and is toasted evenly. Then it is dissolved by hand in a little cold water. In addition, in a pot put the 2 liters of water to boil, when it releases the first boil, add the dissolved amaranth, the cinnamon sticks and the sugar. It is constantly moving to prevent it from climbing. When it starts to boil, the heat is lowered. Boil for 10 to 15 minutes and serve.

PRESENTATION

It is served in glasses or clay jars and is accompanied with the tamales de rajas.
