INGREDIENTS

  • 6 guajillo chili peppers ginned
  • 1 piece of onion
  • 2 cloves of garlic
  • 1 cinnamon stick
  • ½ teaspoon oregano
  • ¼ teaspoon thyme
  • 1 pinch of cumin
  • salt and pepper to taste
  • 1 kilo of mutton cut into pieces (it can be made with goat meat)
  • maguey leaves (mixiote)

PREPARATION

The chilies are soaked in boiling water, when they soften they are ground with the onion, garlic, cinnamon and aromatic herbs, strain and season to taste. The meat is marinated with this sauce for at least 30 minutes. Take the maguey leaves, soak them very well to soften them, drain them, carefully remove the membrane or cloth that covers them and this is filled with a little of the previous mixture. Mixiotes or little packages are formed and tied with a little string. They are accommodated in a steamer (with boiling water below), covered, and steamed over medium heat until the meat feels very soft.

PRESENTATION

They are served on a platter in the same wrappers and very hot.
