INGREDIENTS

(For 6 people)

  • 3 yellow coastal chiles, or failing that, guajillos
  • 1 medium tomato
  • 1 miltomate (green tomato)
  • 2 cloves
  • 2 peppers
  • 1 teaspoon oregano
  • 1 leaf of acuyo (herbsanta)
  • 200 grams of corn dough
  • 1 liter of chicken consommé
  • 1 1/2 kilo of chicken cut into pieces and cooked
  • 200 grams of green beans clean, cut and cooked
  • 2 chayotes cut into large cubes and cooked
  • 16 cooked and peeled chambray chips
  • 6 zucchini cooked and halved
  • Salt to taste

PREPARATION

The chili and tomato are cooked in a little water; then this is ground with the spices, except for the acuyo, and strained; Add the chicken consommé and boil in a saucepan, adding the acuyo leaf and salt to taste. Finally, little by little and without stopping moving, the mass is added, liquefied with a little water until it forms a gruel; continue cooking until thick, taking care not to raise the flame. When serving, add the vegetables and chicken.

PRESENTATION
