INGREDIENTS

- 1 slice of fillet 4 cm thick
- Corn oil for frying
- Salt and freshly ground black pepper to taste
- 2 tortillas
- 4 tablespoons refried black beans
- 1 slice of Manchego cheese
For the green sauce
- 10 cornfield tomatillos
- 1 piece of onion
- 1 or 2 serrano peppers
To end
- 30 grams of fresh cheese crumbled
PREPARATION
Heat the oil in a frying pan, add the meat, leave it for 3 minutes and then turn it over, add salt and pepper, place the slice of cheese on the already roasted part and let it cook for 3 more minutes (this is for medium).
The tortillas are passed through the hot oil and immediately drained on absorbent paper, then spread with the very hot beans; Once this has been done, a tortilla with beans is placed on the plate, the meat is placed on it, bathed with the juice that was released when frying and covered with another tortilla with the beans facing down; finally it is covered with the green sauce and sprinkled with the cheese.
