INGREDIENTS

(For 8 people)

  • 3 cups of toasted amaranth
  • 6 large dried and ground shrimp
  • 200 grams of bean powder or ground roasted bean
  • 8 whole eggs
  • Water, the necessary
  • Salt to taste
  • Corn oil for frying

For the sauce

  • 2 kilos of tomato
  • 10 guajillo pulla chiles toasted and ginned
  • 8 meco chipotle peppers, roasted and ginned
  • 1 teaspoon of anise
  • 1 cinnamon stick
  • 4 tablespoons of toasted sesame seeds
  • 2 tablespoons corn oil

PREPARATION

The amaranth, shrimp, bean flour and beaten egg yolks are mixed. The whites are beaten to the point of nougat and incorporated into the above. Salt is added. Spoons of this pasta are taken and poured into the hot oil, forming pancakes, which, when they are already golden, are removed from the oil with a perforated spoon or with a small spoon and placed on absorbent paper to remove excess fat . They are placed in the sauce and served.

The sauce

Put the tomatoes and chilies to cook with a cup of water and salt. Once cooked, they are removed from the fire, liquefied and strained. The anise, cinnamon and sesame are ground in a mortar or mortar. In a large pot, heat the oil, add the ground spices and fry for a few seconds, add the ground and strained tomato and let it season.
