Go ahead and prepare one of the most representative dishes of New Leonese cuisine: kid. Here we present the ingredients and the way of preparation to taste it with five guests.

INGREDIENTS

(For 6 people)

  • 1 kid between 18 and 21 days old split into pieces. The spine is requested apart, cut into small pieces
  • 250 grams of lard
  • The juice of 6 oranges
  • Garlic salt


For the crushed sauce:

  • 1 tablespoon of lard
  • 1 onion finely chopped
  • 6 serrano peppers, chopped
  • 4 tomatoes ginned and chopped
  • ½ cup of beer
  • 1 bunch of coriander, roughly chopped
  • Salt to taste

PREPARATION

The pieces of kid, already clean and dry, are spread very well with butter and orange juice, sprinkling them with garlic salt. They are placed on a baking sheet, covered with aluminum foil, put in the preheated oven at 250 ° C for 2 hours or until the meat is soft. The tinfoil is removed to brown the kid.

sauce:

Put the butter to heat, add the onion, add the chili and tomato, the beer, salt to taste and let it season very well. It is removed from the heat and the coriander is added.

PRESENTATION

The roast kid is served in a casserole, accompanied by the sauce and freshly made flour and corn tortillas.
