INGREDIENTS
- 8 slices of chihuahua cheese, one centimeter thick each
- beaten egg for breading
- 1 cup of ground bread for breading
- Corn oil for frying
Green sauce:
- ½ kilo of tomatillo
- 1 cup of chopped lettuce
- 1 medium onion, chopped
- 2 roasted chilacas, peeled and ginned
- 3 spoonfuls of sugar
- Salt to taste
Red sauce:
- 250 grams of ancho chili, ginned or 2 cloves of garlic
- ¼ teaspoon marjoram
- 1 teaspoon oregano
- 1 cinnamon stick
- 1/8 of cup of vinegar
- ½ cup of orange juice
PREPARATION
The cheese slices are passed through the egg, then through the ground bread and brown in the hot oil; Drain on absorbent paper and serve immediately, half covered in green sauce and the other in red sauce.
Green sauce:
All the ingredients are cooked along with ¼ cup of water. Everything is liquefied. The sauce should be sweet.
Red sauce:
Put the ancho chili to boil in a little water with the garlic and aromatic herbs; This is blended with the vinegar, orange juice and salt to taste.
PRESENTATION
Two slices of cheese are placed on an individual plate, and one of them is bathed with green sauce and the other with red sauce, it can be served accompanied by a good green salad.
