INGREDIENTS

(For 12 to 14 people)

  • 2 1/2 kilos of pork meat (leg or loin)
  • 2 carrots
  • 1 stick of celery
  • 1 large onion, halved
  • 2 cloves of garlic
  • 3 sprigs of parsley

For the sauce:

  • 250 grams of cacahuazintle corn
  • 250 grams of pumpkin seeds with shell
  • 250 grams of ancho chili pepper deveined
  • 100 grams of lard
  • 2 cloves of garlic
  • 1 cinnamon stick
  • 2 cloves
  • 2 liters of broth where the meat was cooked
  • Salt and pepper to taste

PREPARATION

The meat is cooked with the vegetables until it is soft. It moves away.

The sauce:

In a large frying pan, heat half of the butter, where the corn, the seed and the chili are sautéed. Add half of the broth and let everything soften; then it is ground with the spices and strained.
