Follow this very simple recipe to prepare chile de bola, a very original sandwich.

INGREDIENTS

(For 6 to 8 pieces)

  • ½ kilo of raw pumpkin seed
  • 3 ancho peppers ginned and soaked in hot water
  • 5 dried chiles (morita) ginned and soaked in hot water
  • Salt to taste
  • 6 or 8 corn husks soaked and drained.

PREPARATION

The seeds are roasted in a pan, stirring constantly so that they do not burn. They are ground in a food processor or in a meat grinder together with the soaked chilies, a little of their soaking water and salt to a smooth paste consistency for spreading. This pasta is wrapped in the tamale leaves and can be stored for up to a week in the refrigerator.

PRESENTATION

It is served wrapped in its same sheet with tortillas and avocado to make tacos.
