With this recipe you can prepare a baked leg.

INGREDIENTS

To prepare the baked leg you will need: 3 kilos of pork leg, ½ head of garlic, 2 large onions, 6 cloves, 6 fat peppers, 1 cup of sour orange juice, 1 cup of chicken broth, 125 grams of ancho chili, ginned and soaked in boiling water, ½ grated piloncillo, 1/8 cup of vinegar, 2 sprigs of thyme, 4 bay leaves, 1 teaspoon of oregano, salt to taste, ½ cup of sweet sherry. For 16 to 20 people.

PREPARATION

Grind the garlic, onion, cloves, peppers and salt to taste and with this the leg is spread very well. This is placed on a baking sheet and browns very well on all sides on the stove. It is bathed with the sauce, the aromatic herbs and sherry are added and the oven is preheated at 180 ° C until soft. It takes about 2½ hours.

sauce: Grind the chili with the orange juice, the piloncillo, the vinegar and salt to taste and strain.

Note: If you cannot find sour orange, you can replace it with ¾ cup of orange juice, the juice of a lemon and ¼ cup of vinegar.

PRESENTATION
