INGREDIENTS

  • 3 medium nopales well cleaned and cut into squares
  • 1 cup of water
  • 5 whole eggs
  • 1 cup of oil
  • 1 cup of sugar
  • 2 cups of flour for pancakes
  • 1 tablespoon of almond essence
  • 2 young nopalitos or icing sugar to garnish

PREPARATION

The nopales are blended with a cup of water. The eggs are beaten very well and the oil is added little by little and then the sugar; they continue beating and the flour is added to them without stopping beating until the pasta no longer has lumps; the essence of almond and the liquefied nopales are incorporated. Everything is mixed very well and poured into a well greased round cake tin. Put in the preheated oven at 180 ° C for 40 minutes or until cooked.

The nopal cake is removed from the mold and decorated with the tender nopalitos, or if you wish you can sprinkle it with icing sugar.
