INGREDIENTS

  • 1 large turkey or 3 chickens, cut into pieces

  • 3 garlic cloves

For the mole:

  • 250 grams of black chilhuacle pepper
  • 250 grams of red chilhuacle pepper
  • 250 grams of mulato chili
  • 250 grams of Mexican pasilla chili
  • 2 tortillas burned
  • the seeds of the chili peppers
  • 1 kilo of lard
  • 2 large onions, sliced
  • 1 large garlic head
  • 2 plantains peeled
  • 300 grams of yolk bread
  • 100 grams of toasted sesame seeds
  • 100 grams of roasted peanuts
  • 100 grams of walnuts
  • 150 grams of almonds
  • 100 grams of seed
  • 100 grams of raisins
  • 2 kilos of tomato
  • 1 kilo of miltomate (green tomato)
  • 1 teaspoon of nutmeg
  • 1 cinnamon stick
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon marjoram
  • 1 teaspoon of anise
  • 1 pinch of cumin
  • 5 cloves
  • 5 fat peppers
  • 100 grams of sugar
  • 6 roasted avocado leaves
  • 250 grams of metate chocolate
  • salt to taste

PREPARATION

The turkey or the chickens are cooked with water to cover, with the onion, garlic and salt to taste. The chili peppers are roasted, opened and ginned, the seeds are separated and these are roasted until they are burned; then they are put to soak in water so that they do not become bitter and drain. The chilies are soaked in very hot water, drained and left to soak for 30 minutes in cold water. In half the hot butter, add the onion and garlic and add the sliced ​​bananas, the yolk bread, the sesame, the peanuts, the walnuts and the raisins. The tomato is boiled together with the tomatoes with salt and water to cover. They are liquefied and strained.

The chilies are ground together with the seeds and the burned tortillas, they are strained and mixed with the previously fried and the spices. In a large casserole, put the rest of the butter and fry this mixture there, add the tomato and ground and strained tomato, a liter of broth where the turkey was cooked and let it season for 20 minutes, add the chocolate, the sugar, the rest of the broth and the avocado leaves, boil for at least an hour over low heat, stirring frequently so that it does not stick. Add the turkey pieces and boil for another 15 minutes. Before serving, remove the avocado leaves.

PRESENTATION

It is served in the same mole casserole in which it was cooked, accompanied by refried beans, red rice and warm tortillas.
