Here we tell you how to prepare a delicious lettuce and beet salad with two typical Mexican ingredients: the tortilla and the jicama.
INGREDIENTS
(For 1 person)
- 1 large tortilla cut into very fine julienne
- Corn oil for frying
- 4 cups of assorted lettuce leaves very well washed, disinfected and cut into pieces
- 1 small beet, peeled and cut into very fine julienne
- 1 piece of jicama peeled and cut into very fine julienne
For the dressing:
- 6 tablespoons of black olive oil or, failing that, green olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper or to taste
To decorate:
- Chopped chives
- One or two cress flowers
- Cucumber slices
PREPARATION
In a frying pan, brown the tortilla strips in hot oil until they are toasted. Drain on absorbent paper. The lettuce is mixed with half the dressing and arranged on a large plate in a decorative way, topped with the beets, jicama and tortilla and bathed with the rest of the dressing. Sprinkle with chopped chives and garnish with cress flower and cucumber slices. It is served immediately so that the tortilla does not soften.
The dressing:
Put all the ingredients in a jar, cover and shake until very well emulsified.
