INGREDIENTS

(For 6 people)

  • 4 liters of water
  • 1 kilo of shank
  • 500 grams of marrow bones
  • 250 grams of needles
  • 3 carrots, peeled
  • 1 leek, sliced
  • 3 tail onions cut into pieces with everything and their tails
  • 2 tomatoes, chopped
  • 1 sprig of celery
  • 1 bunch of coriander
  • 12 fat peppers
  • 1 tablespoon of salt or to taste

To accompany:

  • 4 potatoes cooked and cut into regular pieces
  • ½ small cabbage chopped, roughly chopped and cooked
  • 3 carrots, peeled and cut into medium wheels and cooked

PREPARATION

Bring the water to a boil, add all the ingredients and cook over a very low heat for five hours. The broth should not foam, if the boil is slow the broth will be clear. After five hours the broth should be strained through a sky blanket soaked in cold water and squeezed, doing it little by little so that the broth does not turn sour. It is served accompanied by the cooked vegetables so that everyone can add them to their liking, with the meat and marrow in pieces.

PRESENTATION

The broth is served in a tureen with the meat inside and the vegetables on a separate plate for each guest to add to their liking. If you want you can also add cooked zucchini and slices.
