INGREDIENTS
(For 8 people)
- 1 kilo of large shrimp well cleaned and peeled leaving the tail
- 2 cups of sangrita (see recipe)
- Black pepper to taste
- 300 grams of Chihuahua cheese cut into strips
- 750 grams of bacon strips
- Corn oil
- 1 cup of white tequila
To accompany, rice milk:
- 3 cups of rice well soaked in hot water and drained
- 1 stick of butter
- 1 tablespoon of oil
- 1 medium onion finely chopped
- 2 carrots, peeled and finely chopped
- 1 cup of cooked corn kernels
- 1 green bell pepper finely chopped
- 3 cups of chicken broth
- 3 cups of milk juice of ½ lemon
PREPARATION
The shrimp are marinated in the sangrita for 30 minutes, drained and the marinade is saved. The shrimp are split lengthwise but not completely separated; they are filled with the cheese, wrapped in the strips of bacon and fried in the hot oil until golden brown; they should be kept warm. The marinade is boiled for 10 minutes, ¾ parts of the tequila are added, it is left to cook for two more minutes; with this, the shrimp are added, poured into the serving platter and flamed with the rest of the tequila.
Milk rice:
The rice is fried in butter and oil, half-fried the onion is added and it continues to fry until when it is moved in the saucepan it sounds like sand; add the carrots, corn kernels and bell pepper and fry for one more minute; add the broth, milk and lemon juice; when it boils, cover, lower the heat, very low, and leave until the rice is cooked, approximately 25 minutes
PRESENTATION
Make a thread with the rice and put part of the shrimp in the center and the rest in a small bowl.
