Make this rich and simple recipe for mullet roe in green. Perfect for sharing.
INGREDIENTS
(For 2 persons)
- 2 mullet roe
- 2 butter spoons
- 2 tablespoons olive oil
- Salt to taste
For the sauce
- 1 small clove of garlic
- ½ onion, roughly chopped
- 1 jalapeño pepper (or to taste)
- 2 large acuyo or yerba santa leaves, roughly chopped
- ½ cup coriander leaves
- 1¼ cups fish broth
- 1 tablespoon butter
- 1 teaspoon of oil
- Salt to taste
PREPARATION
Put the butter and oil in a frying pan and when they are very hot add the roe, to which the end that looks like a tail will have been carefully cut, and brown. They are served on a plate bathed with their sauce.

All the ingredients are blended very well and sautéed in the hot butter together with the oil for about 10 minutes or until well seasoned.
PRESENTATION
It is served in individual plates bathed with its sauce and accompanied by freshly made tortillas.
