INGREDIENTS

- 3 yellow coastal chilies or guajillo failing that
- 1 medium tomato
- 1 miltomate (green tomato)
- 2 cloves
- 2 peppers
- 1 teaspoon oregano
- 1 acuyo leaf (yerbasanta)
- 200 grams of corn dough
- 1 liter of chicken consommé
- ½ kilo of chicken cut into pieces and cooked
- 200 grams of green beans clean, cut and cooked
- 2 chayotes cut into large cubes and cooked
- 16 cooked and peeled chambray chips
- 6 zucchini cooked and halved
- Salt to taste
PREPARATION
The chili is cooked with the tomato in little water, it is ground with the spices except the acuyo; Strain, add the beef consommé and boil in a saucepan, adding the acuyo leaf and salt to taste. Finally, little by little without stopping stirring, the mass is added, blended with a little water to form a gruel; continue cooking until it is thick, taking care not to raise the heat.
PRESENTATION
The mole is served in a deep plate, when serving it, the vegetables and chicken are added. It is accompanied by refried beans and slices of chile de agua.
