In Mexico you have many rich soups to eat. Try this recipe from Michoacán: the typical Huitzimangari Soup.
INGREDIENTS
(For 8 people)
- 4 medium tomatoes
- ½ medium onion
- 1 small garlic clove
- 2 tablespoons corn oil
- 2 liters of chicken broth
- 1 sprig of epazote
- 8 small nopales cooked and cut into thin strips
- 2 cups fresh beans cooked and peeled
- 2 cups of charales
- Salt to taste
PREPARATION
Grind the tomato with the onion and garlic and fry in the hot oil until it is chinito, add the broth and the epazote branch and let it boil for 3 minutes, then add the nopales, beans and charales and simmer for 10 more minutes. It is served very hot.
PRESENTATION
It is served in clay dishes, it can be served with chile de arbol or guajillo, cut and fried.
