Tejate is a pre-Hispanic drink prepared by the Zapotec Indians based on corn and cocoa. Follow this recipe and know its flavor!

INGREDIENTS

(For 12 people)

  • 1 kilo of corn
  • 1 kilo of ash
  • 70 grams of shelled white cocoa
  • 50 grams of coroso
  • 3 pistles (mamey bones)
  • ¼ cup of cocoa flower
  • sugar to taste

PREPARATION

The corn and ash are soaked in water from the day before to loosen the skins. This, well ground, they call nicuanextle. The cocoa is roasted together with the cocoa flower, the coroso and the pistle and everything is ground very well. It is mixed with the nicuanextle. In an apaxtle or large clay pot with clean hands and arms, begin to beat and add cold water little by little to make it foam, it should be left as foamy as possible, the foam is put aside and sugar is added to taste, mixing well.

PRESENTATION

It is served in red gourds making sure that each one has enough foam on top. It should be served very cold.
