Recipe to prepare a Tarascan Soup from Michoacán

With this recipe you can prepare a delicious Tarasca Soup, a typical dish from Michoacán. Enjoy it!

INGREDIENTS

6 tablespoons corn oil
1 large onion finely chopped
2 large garlic cloves, finely chopped
1 can of 1 kilo of tomato puree
2 liters of water
4 bay leaves
2 sprigs thyme
2 sprigs of marjoram
4 tablespoons powdered chicken broth
1 teaspoon freshly ground black pepper
6 ancho chiles ginned, cut into strips and fried (in Michoacán they are
lama "Pasilla")
10 tortillas cut into strips and fried
350 grams of fresh cheese cut into strips
¼ liter of heavy cream
Epazote chopped to taste

PREPARATION

In the hot oil, add the onion and garlic, add the tomato puree and fry until it is "chinito", then add the water, the broth, the aromatic herbs and the pepper. Boil for 10 minutes. Take a little caldillo and with it two fried chili peppers and a fried tortilla are blended, poured into the boiling soup and left to simmer for 5 more minutes.

PRESENTATION

In individual soup plates with the fried tortilla, the fried chili strips, the cheese strips, a tablespoon of cream and chopped epazote to taste. Serve and enjoy your Tarasca Soup, a Michoacan dish.
