Meringues with Ice Cream and Chocolate Sauce

For the meringues: 6 whites or ¾ cup, 2 cups sugar, 1½ teaspoons lemon juice or mild vinegar.

For the vanilla ice cream: ¾ cup of sugar, ½ tablespoon of cornstarch, 1/8 teaspoon of salt, 1½ cups of milk, 1 egg yolk, ½ can of 160 milliliter evaporated milk, ½ cup of whipped cream, 2 teaspoons of vanilla extract.

For the chocolate sauce: 1/3 of a cup of sugar, 2/3 of a cup of light cream, 300 grams of semisweet chocolate cut into pieces. For 8 people.

PREPARATION

The meringues: The whites are beaten to the point of nougat, the sugar is added little by little and before finishing with the sugar it is alternated with lemon juice. A tray is lined with waxed paper and a few large tablespoons of meringue are placed, forming a hole in the center with the back of the spoon. They are baked in a preheated oven at 140 ° C for 40 minutes or until the meringues are dry. They are removed and allowed to cool.

A scoop of vanilla ice cream is placed in the center of each meringue and covered with the chocolate.

Vanilla ice cream: The sugar is combined with the cornstarch and salt, the milk is added and put over medium heat until it boils, the heat is lowered and it is left to boil for a minute. The yolks are beaten lightly, a cup of the previous mixture is added to them, it is beaten and then the rest of the mixture is incorporated; put it back on the fire and simmer for two or three minutes or until it thickens a little; the evaporated milk, the cream and the vanilla extract are incorporated; let it cool down to room temperature and pour it into the refrigerator; the instructions for use are followed.

Chocolate sauce: In the upper part of a water bath dish, mix the sugar and approximately half of the cream, stirring over boiling water, which will be in the lower part of the water bath, until the sugar dissolves. Turn off the heat and leave the upper part of the double boiler on the lower part, add the chocolate and stir until it dissolves. Then add the rest of the cream.

PRESENTATION

The meringues are placed around a round plate and natural flowers are placed in the center.
