Recipe to prepare cushion soup

INGREDIENTS FOR 4 PEOPLE)

- 1 kilo of post of cushion, horse mackerel or pámpano.

- 2 tablespoons of olive or corn oil.

- 1 finely chopped onion.

- 2 roasted garlic cloves.

- 4 tomatoes, peeled or ginned and chopped.

- 1 ½ liters of water.

- 1 sprig of epazote or to taste.

- 2 sprigs of parsley.

- Salt to taste.

- 2 sweet chilies or 1 ½ bell peppers, sliced

- 2 zucchini cooked and sliced.

- 2 carrots peeled, cooked and cut into pieces.

- 2 potatoes cooked, peeled and cut into cubes.

- 4 slices of poached tomato

PREPARATION

In the oil, add the onion, add the garlic cloves and the tomato and let it season perfectly, add the water, let it boil for five minutes and add the fish posts, the epazote, the parsley, the sweet chili and salt to taste. Cook everything over low heat until the fish is soft. To serve it, add the cooked vegetables and boil for two more minutes. Garnish with the poached tomato slices.

PRESENTATION

In a tureen and accompanied by toasted tortillas.
