Tlatloyos are one of the most typical Mexican snacks and now you will have the opportunity to prepare them yourself. Check out this recipe with the flavor of cuitlacoche!

INGREDIENTS

(For 8 to 10 people)

For the tlatloyos

  • 1 kilo of black corn dough
  • 1 kilo of black beans, cooked with 3 avocado leaves
  • 1 teaspoon of tequesquite
  • 10 serrano peppers
  • 2 tablespoons of butter
  • 300 grams of fresh cheese, crumbled to sprinkle
  • Green sauce to accompany
  • Chopped onion to taste

For the cuitlacoche

  • 2 tablespoons lard or corn oil
  • 1 medium onion, roughly chopped
  • 1 kilo of cuitlacoche very clean and chopped
  • Salt to taste

PREPARATION

The beans are ground with the avocado leaves and chili peppers, then added to the hot butter and allowed to thicken until pureed. With the black corn dough, tortillas are made to which the beans are put, then the two ends of the tortilla are folded towards the center, surrounding the filling and giving them an elongated shape. They are cooked on the hot comal. Once cooked, add green sauce, then the stewed cuitlacoche and finally sprinkle with cheese and chopped onion.

Cuitlacoche: The onion is seasoned in the oil or butter, the cuitlacoche and salt are added to taste and fry for a few minutes.
