INGREDIENTS (FOR 6 TO 8 PEOPLE)

  • 10 separated eggs.
  • 1 kilo of cottage cheese.
  • 20 grams of ground cinnamon.
  • 400 grams of sugar.
  • 150 grams of ground egg bread.
  • Butter to grease the mold.
  • Ground bread to bread the mold.

For the syrup:

  • 2 cups of water.
  • 1 cup of sugar.
  • 1 splash of sherry.
  • 50 grams of pine nuts.
  • 50 grams of raisins.

PREPARATION

The yolks are beaten together with the cottage cheese, the egg bread, the cinnamon and the sugar. Stir everything very well and put it in a pan previously greased with butter and a little breadcrumbs, and put it in the preheated oven at 175ºC until it is cooked and browned. Afterwards, it is removed and allowed to cool, and once cold, it is sliced ​​into cocoons, immersed in the very hot syrup so that it is well soaked, left to cool and placed in a deep glass or glass dish.

Syrup. In a large saucepan, boil the water with the sugar until it thickens a little, then the pasta cocolitos, the sherry, the pine nuts and the raisins are added.
