Chimichangas are fried burritos that can be prepared filled with beans, meat, or vegetables. Learn how to make them with this recipe!

INGREDIENTS

(For 8 people)

  • 8 sobaqueras tortillas or 16 wheat flour tortillas
  • corn oil for frying

Bean filling:

  • 100 grams of lard
  • 1 large onion finely chopped
  • Pickled chili peppers, chopped, to taste
  • 2 cups of cooked and ground beans

Meat filling:

  • 3 tablespoons lard or corn oil
  • 1 onion finely chopped
  • 3 serrano peppers finely chopped
  • ½ kilo of fillet cut into strips
  • 2 tomatoes, chopped
  • Salt to taste

To decorate:

  • 3 tomatoes sliced
  • 1 apricot lettuce or a cabbage cut into thin strips
  • 2 avocados, sliced

PREPARATION

Put the desired filling in the tortillas, put two ends of the tortillas towards the center and then the other two edges, to form rectangles. They are fried in hot oil, drained on absorbent paper and served garnished with lettuce or cabbage, and slices of tomato and avocado.

Bean filling:

In the hot butter, add the onion, add the chili and the beans and leave it on the fire until it thickens and is well seasoned.

Meat filling:

Season the onion and chili in the hot butter, add the meat and brown it, add the tomato, salt and pepper to taste, and let it season very well.
