Savor the combination of pulque, the drink of the gods, with a portion of beef through this recipe that we present to you. Enjoy it!

INGREDIENTS

(For 8 people)

  • 1,200 kilos of beef
  • Salt and freshly ground black pepper to taste
  • 6 tablespoons corn oil
  • 1 large onion sliced ​​in feather
  • 2 garlic cloves, peeled and minced
  • 1 spoon of sugar
  • 1 branch of epazote
  • 3 ancho chiles washed, ginned and sliced ​​with scissors
  • 3 cups of good pulque

PREPARATION

The meat is tied so that it does not lose its shape and is seasoned with salt and pepper. Heat the oil in the express pot and there the meat is browned very well, on all sides, then it is removed from the pot and the onion and garlic are seasoned in the same fat, the sugar is added and everything is mixed very well; then the meat, the epazote leaf, the pulque and a little more salt and pepper are added. Cover the pot and cook the meat for approximately 50 minutes or until tender. It is removed from the fire, sliced ​​and served bathed in its sauce and accompanied with cooked and fried chambray chips or with white rice.

Note. It can also be done in the oven, in which case it is put in the oven preheated to 180º C, covered, for an hour and a half or until it is soft. If necessary, add a little more pulque during cooking.
