Follow this recipe to prepare wraps as it was done in the 19th century.

INGREDIENTS

(For 8 people)

  • 1/2 kilo of dough for tortillas
  • 250 grams of butter
  • 1/2 cup oil

For the filling

  • 40 grams of butter (half a bar)
  • 2 tablespoons corn oil
  • 1/2 kilo of brisket cooked and shredded
  • 6 eggs
  • Salt and pepper to taste

To end

  • 3 serrano peppers finely chopped
  • 12 olives pitted and sliced ​​into slices
  • 24 almonds peeled in boiling water and cut into strips
  • 25 grams of raisins
  • 25 grams of pine nuts
  • 2 slices of ham of 25 grams each, cut into squares
  • 2 small tail onions, very thinly sliced ​​and deflected in cold salted water

PREPARATION

24 tortillas of approximately 10 centimeters in diameter are made, cooked on the comal and then stuffed. In a frying pan, heat the butter and corn oil, and there the tortillas are passed, taking care that they do not brown. They are removed, garnished with the rest of the ingredients and then served hot.

THE FILLING
