INGREDIENTS

  • 4 ripe plantains
  • 1½ cups refried black beans
  • Flour flour
  • Corn oil for frying.

For the refried beans:

  • ¼ onion finely chopped
  • 1½ cups of cooked black beans
  • ½ cup bean broth
  • Salt to taste.

For 8 people.

PREPARATION

The bananas are cooked with everything and peel in water until very soft; They are drained and opened, the pulp is removed and mashed with a fork until a puree is left, with this they make some tortillas, in the center they are put refried beans and they are rolled like croquettes, they are passed through flour shaking off the excess , fry in the hot oil and drain on absorbent paper.

Refried beans: The butter is heated and when it is smoking, the onion is added and fried until it turns a golden color, the beans and the broth are added and with the help of a molote they are crushed until they become a puree. They are seasoned with salt. When they are well refried and you can see the bottom of the pan, remove them from the heat.

PRESENTATION

They are served in a small tray or basket lined with fresh banana leaves, they are ideal to accompany a pork roast.
