INGREDIENTS

(For 4 people)

For the crepes:

  • 50 grams of butter melted
  • 6 eggs
  • ¾ cup of flour sifted
  • ½ cup of milk
  • ¼ cup of beer
  • Salt to taste
  • 20 grams of butter for the pan

Filling:

  • ½ kilo of chaya leaves
  • 1 onion finely chopped
  • 4 tablespoons olive oil
  • 1 clove of pressed garlic
  • 2 tablespoons soy sauce
  • ¼ cup of cream
  • Salt and pepper to taste

For the white sauce:

  • 4 tablespoons of stick butter
  • 2 tablespoons flour
  • 2 cups milk
  • 1 cup of chaya cooked, chopped and squeezed
  • Salt and pepper to taste
  • 150 grams of grated Manchego or Gruyère cheese

PREPARATION

The crepes are filled and placed in a refractory, bathed with the white sauce, sprinkled with the cheese and put in the oven or grill to gratin.

The crepes:

All the ingredients are mixed and blended, the pasta is left to rest for 30 minutes and the crepes are made in a small Teflon pan, greasing it from time to time with butter, adding a little pasta with a spoon and quickly moving the pan In circular form. They are turned and left for a few seconds and removed (they must be very thin).

Filling:

The chaya is passed through boiling water so that it cooks for a few seconds, it is removed, drained and finely chopped and squeezed very well. The onion is seasoned in the olive oil, the chaya and soy sauce are added and seasoned for a minute, the cream and salt and pepper are added to taste.

The sauce:

The flour is fried with the butter for a minute, the chaya, hot milk, salt and pepper are added to taste and it is left to thicken for approximately two minutes.
