INGREDIENTS

(For 8-10 people)

  • 1/2 kilo of chickpeas
  • 1/2 kilo of good dough for tortillas
  • 2 ancho chili peppers, soaked in very hot water and drained
  • Salt and pepper to taste
  • Corn oil or lard for frying
  • 200 grams of aged cheese or fresh cheese grated or crumbled
  • 1 cup heavy cream

PREPARATION

The chickpeas are cooked in cold water, without salt, until they are soft, then salt is added and they are left to cook for a few more minutes; then they are drained, peeled off the skins, ground with the chili peppers and mixed with the dough; to this you add salt and pepper to taste. With this dough, thin and small tortillas are made that are filled with cheese, folded and fried in hot oil or butter. Finally they are drained on absorbent paper and served accompanied with the cream and a chili sauce to taste.
