Enjoy the churipo, a typical Michoacán broth, following the steps in this recipe.
INGREDIENTS (FOR 12 PEOPLE)
To prepare churipo you will need to:
- 1 kilo of beef for cooking.
- 1 kilo of dried beef.
- 1 bunch of coriander.
- 3 ancho chiles (in Michoacán they are called “pasilla”).
- 3 guajillo chiles.
- ½ kilo of zucchini cut in half.
- ½ kilo of cabbage divided into regular pieces.
- ½ kilo of carrots peeled and divided into regular pieces.
- Salt to taste.
PREPARATION
The meats are cooked. When they are cooked, add the chopped cilantro and the chilies previously soaked in hot water, blended and strained. Boil for a few minutes and add the vegetables, let everything cook until the vegetables are soft. Season with salt to taste.
PRESENTATION
The churipo is served in clay pots accompanied with corundas and melon atole.
