INGREDIENTS

  • 150 grams of guajillo chili
  • 1 medium onion
  • 1 clove garlic
  • salt to taste
  • corn oil for frying
  • 12 medium or 16 small tortillas
  • 350 grams of fresh cheese crumbled

To decorate:

  • ½ apricot lettuce, thinly sliced
  • 150 grams of fresh cheese crumbled
  • 1 medium onion thinly sliced ​​and deflected in water

PREPARATION

The chilies are ginned, deveined and put to soak in very hot water for 15 minutes; then they are ground with the onion, garlic and salt; Strain and fry in two tablespoons of hot oil. When the sauce is specific and well seasoned, it is removed from the heat. The tortillas are passed through the sauce and fried one by one in a pan with hot oil. They are filled with the cheese, rolled up, placed on a platter and sprinkled with the cheese, then the lettuce and finally the well-drained onion wheels. They are served immediately.

Note: The filling can also be made from shredded cooked chicken or pork.

PRESENTATION
