Prepare some delicious poached eggs accompanied by muffins, chilaquiles or refried beans. A very well served recipe!

INGREDIENTS

(For 1 person)

  • 1 English muffin
  • 2 poached eggs
  • ½ cup hollandaise sauce
  • ½ cup black mole sauce

For the hollandaise sauce:

  • 3 tablespoons white wine vinegar
  • 2 tablespoons cold water
  • ½ teaspoon of salt
  • 1 pinch of white pepper
  • 200 grams of butter
  • The juice of ½ lemon

To accompany:

  • Red chilaquiles
  • Refried beans
  • 1 fruit skewer

PREPARATION

The muffin is cut in half and toasted, the eggs are poached and one is placed on each half of the muffin; The hollandaise sauce is mixed with the black mole and the eggs are bathed with this. They are served with red chilaquiles and beans.

Way to poach eggs:

½ liter of water is calculated for two eggs. Boil the water, add salt and two tablespoons of vinegar. The heat is left low so that it has a very slow boil. The eggs are married one by one in a small plate. The water is swirled and each egg is added separately. Cook for three minutes and remove very carefully with a slotted spoon. They can also be made in special molds for that use.

Hollandese sauce:

Reduce the vinegar with the cold salt and pepper water until it is reduced to a tablespoon, let it cool and add ½ tablespoon of cold water . The yolks are placed on top of a saucepan for a bain-marie, with the previous infusion and a piece of butter. It is placed on the other part of the saucepan that should be on the fire filled to 1/3 of its capacity with water about to boil or simmering very gently. It is beaten without stopping with a wire whisk until the butter is integrated, then another piece of butter is added, and so on until it is finished. The sauce is removed from the heat, the lemon juice is added and served.

Note:

If you notice that the sauce becomes too thick during cooking, add ½ teaspoon of cold water. The maximum amount of water you can add in this way is 1½ tablespoons of cold water.

PRESENTATION

The eggs are served in an individual plate, accompanied by refried beans and red chilaquiles, garnished with a fruit skewer.
