Recipe: Lunch Empanadas

Nothing like some delicious empanadas for the luncheon. Here is a simple recipe to encourage you to prepare them.

INGREDIENTS (FOR 8 PEOPLE)

For the pasta:

  • 4 cups of flour.
  • 2 teaspoons of baking powder.
  • 2 teaspoons of salt.
  • 6 tablespoons of lard.
  • 2 eggs cold water as needed.

For the stewed meat filling:

  • 2 tablespoons of corn oil.
  • 1 small onion finely chopped.
  • 2 serrano peppers, or to taste, chopped
  • 200 grams of brisket cooked and shredded.
  • 2 medium tomatoes ginned and chopped.
  • 1 teaspoon, or to taste, chopped cilantro.
  • Salt to taste.

For the mince filling:

  • ¼ medium onion finely chopped.
  • 1 clove of minced garlic.
  • 30 grams of butter.
  • 250 grams of ground pork tenderloin, cooked with ½ onion and 1 clove of garlic and drained.
  • 1 cup of tomato ground and strained.
  • 1 tablespoon of chopped parsley.
  • 2 tablespoons of raisins.
  • 2 tablespoons of peeled and chopped almonds, salt and pepper to taste.
  • 1 teaspoon of sugar.
  • 1 egg beaten with 1 tablespoon of cold water to glaze.

PREPARATION

Pasta: Sift the flour with the salt and the baking powder, mix it quickly with the tips of the fingers with the butter until forming peas, add the eggs and the cold water necessary to form a workable paste and let it rest for 30 minutes. The pasta is spread thin, with the rolling pin, on a floured table, circles 15 centimeters in diameter are cut and filled, they are folded as if they were quesadillas and the edges are glued with a little egg white or water and it is pressed with the fingers. They are varnished and put in a preheated oven at 200 ° C for 25 minutes or until they are cooked and golden brown.

Stewed meat filling: In the oil, season the onion and the minced chili, add the meat and fry it for a minute. Add the tomato, coriander and salt to taste and let it season very well. There should be a thick stew.

Mince filling:
The onion and garlic are seasoned in butter, the tomato is added and when it is chinito add the parsley, the meat, the raisins, the almonds, the sugar, and salt and pepper to taste. Let it season and thicken all very well.

Note:
These empanadas can also be filled with pork rinds in green sauce or roia.
