You can prepare this traditional Mexican dish with our recipe.

INGREDIENTS (FOR 6 PEOPLE)

  • 1 medium chicken cut into pieces, plus 1 whole breast.
  • Salt and pepper.
  • Corn oil for frying.
  • 3 ancho chili peppers deveined and ginned.
  • 125 grams of peeled almonds.
  • 4 tomatoes roasted, peeled and ginned.
  • 2 cloves of garlic
  • 1 medium onion.
  • 6 black peppers.
  • 3 cloves.
  • 1 cinnamon stick.
  • 1/2 butter bread or, failing that, bolillo.
  • 1 small male banana.
  • 2 tablespoons sugar or to taste
  • Salt to taste.
  • 4 cups of chicken broth.

To decorate:

  • 100 grams of peeled almonds.
  • 100 grams of pitted olives.

PREPARATION

The chicken pieces are seasoned and fried in a clay pot, taking care not to brown them too much. Then the chilies, almonds, tomatoes, garlic, onion, peppers, cloves, cinnamon, bread and banana are fried in the same oil. All this is perfectly ground, adding, if necessary, a little broth; put this back in the casserole and let it season over low heat; the chicken, the sugar and the broth are then added and covered. Let it simmer until the chicken is cooked. Before serving, add the almonds and olives.

PRESENTATION

It is served on an oval platter, garnished with a sprig of Chinese parsley or smooth parsley. It is served with white rice.
