In some regions of the country, it is customary to eat armadillo. Here we give you a recipe to prepare it.
INGREDIENTS (FOR 8 PEOPLE)
- 1 armadillo.
- 20 lemons.
- 100 grams of achiote.
- 6 garlic cloves, peeled and crushed.
- 4 guajillo chilies cut into wheels.
- 1 onion ground
- Salt to taste.
To accompany it:
- Oaxacan tortilla chips.
- Coriander to taste
PREPARATION
The shell is removed from the armadillo, opened at the belly, perfectly emptied of its viscera and washed in various waters acidified with lemon juice. Place it in a saucepan with water to cover, add the achiote, garlic, guajillo chilies, ground onion and salt to taste. Bake in a preheated oven at 200 ° C for three to four hours or until soft.
PRESENTATION
To have a good presentation, the armadillo is shredded into not very small pieces. Served with Oaxacan tortilla chips and chopped cilantro to taste
