Ingredients

(For 4 people)

  • 24 large shrimp
  • 1 medium onion halved
  • 2 cloves of garlic
  • 1 bay leaf

For the mole

  • 3 tablespoons corn oil
  • 1/2 medium onion
  • 2 small garlic cloves
  • 4 ancho chili peppers
  • 1 guajillo chili
  • 2 or 3 arbol or rat tail chillies
  • 2 balls (about the size of a walnut) of tortilla dough
  • Salt and pepper to taste

Preparation

The shrimp are cooked with everything and the shell, with the onion, garlic, bay leaf and salt until they are cooked (approximately 4 minutes). They are removed and the cooking water is set aside (they call this shrimp juice). They are peeled and served with the mole.

The mole

The oil is heated and in it the onion and garlic are browned, then they are removed and the ground and strained chilies are added; They are left to season and then the shrimp juice and the dough are added, stirring to mix well. Let it season for a few minutes and serve.
