The aporreadillo is a meat and egg-based dish, seasoned with lemon and green and red sauce. Follow this recipe and give it a try!

INGREDIENTS FOR 6 PEOPLE)

  • 1 kilo of beef sirloin steaks or pulp
  • salt to taste
  • juice of 2 lemons
  • corn oil for frying
  • 8 eggs

For the red sauce:

  • 6 large tomatoes roasted and peeled
  • 6 chilies or to taste, serrano, roasted and peeled
  • ½ roasted small onion
  • 1 pinch of cumin
  • 1 garlic clove roasted

For the green sauce:

  • 350 grams of green tomatoes
  • ½ medium onion cut into chunks
  • 1 clove garlic
  • 6 to 8 serrano peppers or to taste
  • Salt to taste
  • 1 tablespoon corn oil

PREPARATION

The meat is seasoned very well, smeared with the lemon juice and left to dry in the sun. Once dry, it is divided into medium pieces and fried in oil, the excess fat is removed and the semi-beaten eggs are added, stirring until there are some not very dry scrambled eggs. It is poured into a plate and half is bathed with red sauce and half with green sauce.

Red sauce:

All the ingredients are ground very well in the molcajete.

Green sauce:

The tomatoes are cooked with the onion and garlic. Blend and fry the sauce in the oil.

PRESENTATION

It is presented in an oval plate covering half with red sauce and the other half with green sauce, accompanied by beans from the pot and freshly made tortillas.
